Pilau & Kachumbari – Kenyan Granny Meg’s recipe

Beef Pilau

Ingredients

2 teaspoons ground pilau masala

1 teaspoon salt

1 teaspoon ground garlic

1 teaspoon ground ginger

2 tablespoons vegetable oil

1 onion sliced

1 tomato sliced

2 tablespoons tomato paste

¼ kg boiled beef cubes

2 potatoes diced

4 cups water

2 cups rice

Method

  1. Heat oil with salt, garlic, ginger and sliced onions until the onions turn golden brown.
  2. Add beef, stir for 5 minutes then add tomatoes and tomato paste. Cook for 5 minutes.
  3. Add potatoes and rice, stir lightly then add boiled water. Reduce heat and let it cook.

*Serve warm.

Tip: To avoid rice clumping, you can place a piece of bread on top of your pot, put the lid back on and allow to sit for 5 – 10 minutes. The extra liquid will be absorbed by the bread.

Kachumbari

Ingredients

1 onion diced

2 tomatoes diced

½ teaspoon salt

1 lemon

2 tablespoons parsley chopped.

Method

  1. Place the diced onion in a bowl, add salt.
  2. Massage the onion in the salt then add warm water and let it stand for 5 minutes.
  3. Drain the onions and add the diced tomatoes. Stir, squeeze the lime juice and sprinkle the chopped parsley.

*Serve cold.
